Protein Pancake.

Just got this from Chad Troup...so I can't take credit. But I saw him eating this as he judged our show this weekend and it looked so good I had to ask him about it. he sent me the recipe yesterday and i will be making it ASAP.

Here it is for all to enjoy.

Buckwheat Pancakes
-Hodgson Mill Buckwheat or Wholewheat Pancke Mix
You can find it for sure at the Shop N' Save in Dardene at N & 40, but you can also find it at some Dierbergs & other S & S locations.

 

-1 full serving of mix 2/3cup or 40g
(Depending on how many carbs you want, need for that meal)
1 serving = 5g Protein, 28g Carbs, 1 Fat
1/2 serving= 2.5g P, 14g C, .5 F
*for best result use 1/2 serving of Buck, & 1/4 cup or 20g of old fashioned
oatmeal ground up, or use quick oats

-1/2 scoop of protein powder
About 12g of protein
(Can be subbed for 3-4 eggwhites)
-Add Cinnamon, or pumpkin spice, or plain
-Mix with hot water until it looks like pancake batter

-Add 1 whole egg & 1-2 egg whites
(1 whole large egg is 6g P, 0g C, 4.5g F)
(1 whole XL egg is 7g P, 0g C, 5g F)
(Egg whites - Large is 3g P, XL is 4g P and no carbs or fat)

-Use fat free olive oil cooking spray. Warm pan to med-low heat.
-Add batter, wait until it starts to bubble then flip

-Stick with fork to make sure they are done.
-Add fat-free butter spray and stevia.

You can sub or add sweet potato or berries for variety. 

I like to multiply the mix & make it in a pyrex casserole dish or
muffin cups for multiple days snacks on the go.

 

Currently to make them in a pyrex dish that makes 6 big ones I use;

120g of Quick Oats

120g of Buckwheat Pancake mix

120g of Gluten Free Pecan Baking Mix

70g of Protein Powder

Mix-Add Hot water

Then 210g of mixed berries

3oz sweet potato

4XL Eggs & 4 XL Egg whites

Mix – Top with 30g of Grape Nuts cereal after its in pyrex dish for a tasty crunch;)

I make a stack of these on high carb days for legs. with sugar free syrup and toped with half a banana and no fat whipped cream:bigsmile:

Sounds good. I have made a lot of protein pancakes, but have never used the pecan baking mix, the sweet potato or the berries. WHen I saw Chad eating this huge thing, I first saw the berries and that is what caught my attention. I love fruit, so anytime I find new ways to work that in, I am all for it. Going to make these in the next day or two and take them with me on a roadtrip this weekend.

@Ben Yea it should be a good one I guess there alot of guys doing it should be really competitive.

 I also throw down a stack of these on my high day but i do 1 blueberry, 1 plain,1 pumpkin with pumpkin and pumpkin spice, and a couple banana ones then mix up powder pb and smother the banana ones.  I also use the sugar free syrup ( joe you didn't read that)! but the whip cream is something Ill have to add:)
